Time is fast running out to put together an impressive dessert before Christmas but this ice-cream cake is both super-easy and super-yum!

The ingredient of Chocolate pistachio ice cream

  1. 500g vanilla ice cream
  2. 1/2 cup craisins (dried cranberries)
  3. 1/3 cup pistachio kernels
  4. 500g double chocolate ice cream
  5. 1/3 cup dried apricots, chopped
  6. 1/4 cup sultanas
  7. 1/4 cup slivered almonds
  8. Raspberries, to serve
  9. Icing sugar, to dust

The instruction how to make Chocolate pistachio ice cream

  1. Line a 21cm x 11cm loaf pan with plastic wrap. Soften the vanilla ice cream in a bowl. Stir in the craisins and pistachio kernels. Spoon into pan. Place in the freezer until firm.
  2. Soften the double chocolate ice cream in a bowl. Stir in the apricots, sultanas and almonds. Spoon into pan. Freeze overnight until firm.
  3. Remove from the freezer and place in fridge for 5 minutes to soften before serving. Use the plastic wrap to help remove. Serve with raspberries and dust with icing sugar.
