Chocolate mousse éclairs


A no-bake dessert, ready in 10 minutes. Add an extra hit of sweetness by drizzling your favourite ice-cream topping over these éclairs.

The ingredient of Chocolate mousse éclairs

  1. 1/2 cup pure cream
  2. 125g mascarpone
  3. 1/2 teaspoon vanilla extract
  4. 1 teaspoon icing sugar mixture
  5. 1 tablespoon Dutch-processed cocoa
  6. 12 small sponge finger biscuits, halved horizontally
  7. 6 strawberries, hulled, thinly sliced
  8. Extra icing sugar mixture, to serve
  9. Strawberries, to serve

The instruction how to make Chocolate mousse éclairs

  1. Using an electric mixer, beat cream, mascarpone, vanilla, icing sugar and cocoa for 2 to 3 minutes or until thick and creamy (dont over-mix).
  2. Place the bottom halves of the sponge fingers on a board, cut-side up. Spoon mousse mixture into a large piping bag fitted with a 1cm round nozzle (see Notes). Pipe mousse evenly over sponge fingers. Arrange strawberries over mousse. Sandwich with remaining sponge finger tops, cut-side down.
  3. Dust u00e9clairs with extra icing sugar. Serve with extra strawberries.
