The ingredient of Sausage, pea & feta salad

  1. 250g chat potatoes
  2. 8 chicken sausages or lamb sausages
  3. 3 1/3 cups (400g) frozen peas
  4. 1 red onion, sliced
  5. 1 cup mint leaves
  6. 2 tablespoons chopped flat-leaf parsley
  7. 1/3 cup (80ml) olive oil
  8. 2 tablespoons lemon juice
  9. 200g marinated feta, drained

The instruction how to make Sausage, pea & feta salad

  1. Cook potatoes in boiling salted water until tender, then drain. Meanwhile, preheat a grill or barbecue on medium and cook sausages for 5-6 minutes until golden and cooked. Thickly slice sausages and halve potatoes.
  2. Cook peas in boiling salted water for 3 minutes, then drain and refresh in cold water. Place in a large bowl or platter with sausages, potato and remaining ingredients. Season, toss and serve.
