  1. 2 tablespoons olive oil
  2. 600g red onions, halved, thinly sliced
  3. 1 1/2 tablespoons white balsamic vinegar
  4. 1 tablespoon brown sugar
  5. 1kg chat potatoes, halved (see note)
  6. 1/2 cup thinly sliced chargrilled red capsicum
  7. 1/2 cup Praise whole-egg mayonnaise
  8. 2 tablespoons finely chopped fresh dill
  9. 1 tablespoon lemon juice
  10. 1 tablespoon drained baby capers, rinsed, drained, chopped

The instruction how to make Caramelised onion potato salad

  1. Heat oil in a saucepan over medium heat. Cook onion, stirring, for 15 to 20 minutes or until golden. Add vinegar and sugar. Cook, stirring occasionally, for 2 minutes or until onion is golden and soft. Set aside.
  2. Meanwhile, place potatoes in a large saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium. Cook for 10 to 12 minutes or until just tender. Drain. Set aside to cool completely.
  3. Place onion mixture, potato and capsicum in a large bowl. Combine mayonnaise, dill, lemon juice and capers in a bowl. Season with salt and pepper. Add to potato mixture. Toss to combine. Serve.
