The ingredient of Greek salad with haloumi

  1. 2 Lebanese cucumbers, peeled at 1cm intervals
  2. 2 x 200g punnets grape tomatoes, halved lengthways
  3. 1/4 red onion, finely sliced lengthways
  4. 1/4 cup (40g) Green Valley pitted Kalamata olives
  5. Salt & freshly ground pepper
  6. 1 tablespoon extra virgin olive oil, plus extra to grease and serve
  7. 1 teaspoon red wine vinegar
  8. 1 teaspoon dried oregano
  9. 180g haloumi, cut in half crossways
  10. 1/3 cup fresh mint leaves, torn in half lengthways
  11. Lemon wedges, to serve

The instruction how to make Greek salad with haloumi

  1. Cut the cucumbers in half lengthways then slice crossways. Combine with the tomatoes, red onion and olives. Season with salt and pepper. Add the olive oil, red wine vinegar and oregano. Toss gently to combine.
  2. Heat a frying pan over a medium-high heat. Cut the haloumi halves in half again horizontally to make four pieces. Grease both sides with oil. Cook for about 1-2 minutes each s ide or until golden.
  3. Toss the mint leaves through the salad. Divide evenly among the serving plates. Top with a slice of haloumi. Drizzle the haloumi with a small amount of olive oil. Serve with lemon wedges.
