Freckles add a touch of nostalgia with these fun melt-and-mix white chocolate blondies.

  1. 2 teaspoons vanilla extract
  2. 1/4 cups caster sugar
  3. 4 eggs
  4. 125g butter, chopped
  5. 2 cups plain flour
  6. 350g white chocolate, coarsely chopped
  7. Freckles, to serve

The instruction how to make Chocolate freckle blondies

  1. Preheat the oven to 160C/140C fan forced. Lightly grease a shallow, square 23cm slab pan. Line with baking paper, allowing the sides to overhang.
  2. Place the butter and 200g chocolate in a large heatproof bowl over a saucepan of simmering water (make sure the bowl doesnu2019t touch the water). Use a metal spoon to stir until the chocolate has melted and the mixture is smooth. Set aside to cool slightly.
  3. Whisk the eggs and vanilla extract into the chocolate mixture until well combined. Stir in the sugar.
  4. Sift the flour into a large bowl. Stir in the chocolate mixture and 100g of the remaining chocolate. Spoon mixture into prepared pan. Bake for 35-40 minutes or until crumbs cling to a skewer inserted into the centre. Set aside, still in the pan, to cool.
  5. Melt the remaining 50g chocolate and drizzle over the blondie. Top with rows of freckles. Remove from the pan and cut into 18 pieces to serve.
