  1. 1/3 cup raisins
  2. 1 cup (150g) self-raising flour
  3. 1/4 cup dark cocoa
  4. 2/3 cup caster sugar
  5. 1/3 cup milk
  6. 1 egg, lightly beaten
  7. 80g melted butter, cooled
  8. 100g dark chocolate, roughly chopped
  9. 1 1/4 cups (310ml) boiling water
  10. 1/3 cup (80ml) rum
  11. 1/2 cup caster sugar, extra
  12. 1 tablespoon dark cocoa, extra

The instruction how to make Chocolate rum and raisin pudding

  1. Preheat oven to 180u00b0C. Scatter raisins into an 8 cup ovenproof dish. Sift flour and cocoa together. Add caster sugar and make a well in the centre.
  2. Add milk, egg and melted butter. Stir until just smooth. Stir in chocolate. Spoon the mixture over the raisins and smooth the surface.
  3. Whisk boiling water, rum, extra sugar and cocoa in a jug. Carefully pour the mixture over the back of a spoon onto the cake mixture. Place the dish on an oven tray and bake for 35-40 minutes. Serve immediately.
